Cooking Tips 

Best to marinate and then braise. this cut has tendons and muscle and must be cooked for some time to get tender. Very flavorful and can make an excellent soup or broth. If you would prefer you could marinate ahead of time while frozen with some fresh young garlic and herbs.  Shanks make for a wonderful appetizer with roasted tomatoes and shredder cheese.
